I ate at Newk's in Flowood on 5/29/11 at 4:00 pm. When I was halfway through my meal, two employees came out with dusters on long poles and started to dust the light fixtures above the condiment bar. I observed dust falling from the light fixtures. No precautions were taken to cover the food area. Also, the open kitchen is only feet away from this activity. Upon smelling dust, I immediately went to get a to-go box. I put my food in the box and left as soon as possible. Dusting should be done when the restaurant is closed and no food is exposed. In my opinion, this practice is very unsanitary and unpleasant to say the least.

I DID NOT OBSERVE ANY DUSTING WHILE I WAS DOING THE INSPECTION. I SPOKE WITH THE MANAGER AND HE SAID IT IS POLICY TO DUST AFTER THE FACILITY HAS CLOSED. HE SAID HE WOULD SPEAK WITH THE OTHER MANAGERS TO MAKE SURE THEY UNDERSTAND THE POLICY.
